2 Cups Dried White Beans
Water for soaking
6 Cups Water
1 Medium Onion -- Sliced
6 Ounces Salt Pork, cut in six pieces
1/2 Cup Molasses
4 Tablespoons Brown Sugar
1 Teaspoon Dry Mustard
1 1/2 Teaspoons Salt
1/4 Teaspoon Black Pepper


Sort and soak beans Drain beans; discard soak water Preheat oven to 300 degrees F In a 4-Quart pot, combine soaked beans and 6 cups of water. Bring to boil, cover reduce heat and simmer for forty five minutes. Drain beans in a colander over a large bowl, reserving cooking liquid. In a 2 1/2 quart bean pot or casserole with a cover, layer beans, onion and salt pork three times. In a small bowl, combine molasses, sugar, dry mustard, salt, pepper and 1 cup of the reserved cooking liquid. Pour over beans. Add enough more reserved cooking liquid to cover beans. Cover and bake 6 to 8 hours until beans are tender, checking beans several times. Stir in reserved cooking liquid as needed to keep beans just covered while cooking.
