Betty Crocker's New Picture Cook Book

serving size: 36 Servings

2 2/3 cups Sugar
2/3 cup Light Corn syrup
1/2 cup Water
2 egg whites -- Stiffly Beaten
1 teaspoon Vanilla
2/3 cup Nuts -- Chopped

Mix sugar, corn syrup and water in saucepan. Stir over low heat until sugar is dissolved; then cook without stirring to 260 degrees F (a little dropped into cold water forms a hard ball). Remove from heat and pour, beating constantly, in a fine stream into the beaten egg whites. Add vanilla and continue beating until mixture holds its shape and becomes slightly dull. Fold in nuts. Drop quickly from tip of buttered spoon onto waxed paper in individual peaks.... or spread in a buttered pan and cut into 1" squares when firm.

It seems that only men can make divinity. I know this because my wife, my daughters, my gran-daughters and all the women in my neighborhood tell me so each Christmas. I think I’ve been had! Again!

One Christmas I added red food coloring to the divinity. I showed it to my wife saying, “look dear, Christmas divinity”. She immediately replied, “Where’s the green”?

I just walk right into it, don’t I?
