Ingredients

3 Cups Vanilla Wafer Cookies -- Finely Crushed
2 Cups Powdered Sugar
1 Cup Walnuts -- Finely Chopped
1/4 Cup Cocoa
1/2 Cup Myer's Spiced Rum
1/4 Cup Light Corn Syrup
Granulated Sugar

Instructions

Chop Vanilla Wafers in food processor to a fine crumb. Reserve. Chop Walnuts in food processor to a semi-fine crumb (leave some pieces about 1/4 inch). In a large bowl, mix crushed wafers, powdered sugar, walnuts and cocoa. Stir in rum and corn syrup. Shape mixture into 1-inch balls. Roll in granulated sugar. Refrigerate in tightly covered container several days before serving.

My sister and I have been looking for rum ball recipes.  These are very festive and sound delicious.  I might like to add a bit more rum if it doesn’t ruin the recipe.  I shall have to experiment.
